I know the learning curve — the fear, the label-reading, the careful questions at restaurants, the meals that still went wrong. I know what it feels like to be the person at the table who has to make everything complicated. I am also a board-certified Family Nurse Practitioner. So I understand this disease on two levels — the clinical reality of what happens when gluten crosses my gut, and the very human reality of trying to live a full life anyway. "I created Celiac Safe Travel because I couldn't find a resource that was both medically accurate and practically useful. Most advice came from people who didn't understand the clinical stakes — or from clinicians who had never tried to eat safely in a foreign country." I wanted something different. First-hand.
